1/4 cup all-purpose flour
2 tablespoons chopped fresh parsley
salt to taste

4 veal shanks
2 tablespoons olive oil
1 large onion, chopped
4 carrots, diced
4 stalks celery, diced
1 cup dry white wine
1 (14.5 ounce) can (14.5 ounce) can diced tomatoes
1 tablespoon chopped fresh thyme
2 bay leaves

1. Preheat the oven to 400°F (200°C).
2. In a bowl, combine all-purpose flour and chopped fresh parsley, then season with salt and pepper. Dredge veal shanks in the flour mixture, shaking off any excess.
3. Heat olive oil in a large skillet over medium heat. Brown the veal shanks in the hot oil for about 10 minutes. Transfer the browned shanks to a large baking dish, keeping the skillet on the stove.
4. Sauté chopped onion, diced carrots, and diced celery in the same skillet until the vegetables start to caramelize, around 5 minutes. Transfer the vegetables to the baking dish. Pour dry white wine into the skillet, bring it to a boil, and scrape up any flavorful bits from the bottom of the pan. Reduce heat to medium-low and simmer until the wine is reduced by half, for about 5 minutes.
5. Add diced tomatoes, chopped fresh thyme, and bay leaves to the wine mixture. Simmer until the tomatoes are heated through, approximately 10 minutes. Pour the tomato mixture over the veal and vegetables in the baking dish. Stir gently to combine all ingredients. Cover the dish with aluminum foil.
6. Bake in the preheated oven for about 90 minutes until the veal is fork-tender.
