A delightful and savory dish featuring pan-seared trout with sweet potatoes, garlic, shallots, and flavorful seasonings.

Ingredients

2-3 Sweet potato, peeled and diced in ½\" cubes
1 tablespoon Olive oil
1 tablespoon Large shallot, peeled and diced
2 Cloves garlic, diced
1 Can trout in oil
2 teaspoons Kosher salt
1 teaspoon Fresh ground black pepper
2 tablespoons Capers
2 Green onion, diced, green only

Instructions

1. Heat a saute pan over medium heat and add olive oil and diced sweet potatoes. Saute until the sweet potatoes are tender, approximately 6-8 minutes.
2. Add diced shallot and garlic to the pan and continue to saute for an additional 3 minutes until fragrant.
3. Incorporate the canned trout and its oil into the saute pan, stirring gently to combine all ingredients.
4. Allow the mixture to cook undisturbed for about 4 minutes, until it starts to brown and crisp. Carefully flip the mixture over.
5. Let the other side cook for an additional 4 minutes until brown and crisp. Season with kosher salt, fresh ground black pepper, and capers. Stir to combine.
6. Crisp up both sides for an additional 2 minutes per side. Then, add diced green onion and gently mix.
7. Adjust seasoning with additional salt if needed. Serve hot and enjoy.
