A delightful and savory dish featuring pan-seared trout with sweet potatoes, garlic, shallots, and flavorful seasonings.
2 -3 | Sweet potato, peeled and diced in ½\" cubes |

1 | tablespoon Olive oil |
1 | tablespoon Large shallot, peeled and diced |
2 | Cloves garlic, diced |
1 | Can trout in oil |
2 | teaspoons Kosher salt |
1 | teaspoon Fresh ground black pepper |
2 | tablespoons Capers |
2 | Green onion, diced, green only |
| 1. | Heat a saute pan over medium heat and add olive oil and diced sweet potatoes. Saute until the sweet potatoes are tender, approximately 6-8 minutes. |

| 2. | Add diced shallot and garlic to the pan and continue to saute for an additional 3 minutes until fragrant. |
| 3. | Incorporate the canned trout and its oil into the saute pan, stirring gently to combine all ingredients. |
| 4. | Allow the mixture to cook undisturbed for about 4 minutes, until it starts to brown and crisp. Carefully flip the mixture over. |
| 5. | Let the other side cook for an additional 4 minutes until brown and crisp. Season with kosher salt, fresh ground black pepper, and capers. Stir to combine. |
| 6. | Crisp up both sides for an additional 2 minutes per side. Then, add diced green onion and gently mix. |
| 7. | Adjust seasoning with additional salt if needed. Serve hot and enjoy. |
