Parmesan-Roasted Edamame Snacks

Ingredients

2. | Begin by preparing the edamame. Rinse the 12-ounce package of frozen shelled edamame under warm water to remove any ice remnants, then drain thoroughly. Spread the edamame on a kitchen towel or paper towels and pat dry to ensure they crisp up during roasting. |
3. | In a medium bowl, combine extra-virgin olive oil, garlic powder, kosher salt, and freshly ground black pepper. Add the prepared edamame, toss well to coat. Sprinkle grated Parmesan and the zest of 1 medium-sized lemon (about 1 tablespoon) over the edamame, toss again to ensure even distribution. |
