Ingredients

1 12-ounce package edamame, thawed
2 tablespoons extra-virgin olive oil
½ teaspoon garlic powder
1 teaspoon kosher salt
freshly ground black pepper
¼ cup grated Parmesan
Zest of 1 medium-sized lemon

Instructions

    1. Preheat the oven to 400°F.
    2. Begin by preparing the edamame. Rinse the 12-ounce package of frozen shelled edamame under warm water to remove any ice remnants, then drain thoroughly. Spread the edamame on a kitchen towel or paper towels and pat dry to ensure they crisp up during roasting.
    3. In a medium bowl, combine extra-virgin olive oil, garlic powder, kosher salt, and freshly ground black pepper. Add the prepared edamame, toss well to coat. Sprinkle grated Parmesan and the zest of 1 medium-sized lemon (about 1 tablespoon) over the edamame, toss again to ensure even distribution.
    4. Spread the seasoned edamame on a parchment-lined baking sheet. Roast in the preheated oven for 15 to 20 minutes, then remove from the oven and mix them well for even cooking. Return to the oven and continue cooking for another 10 to 15 minutes, ensuring they do not burn. Allow the roasted edamame to cool slightly before serving as a standalone snack or incorporating into a salad. Store any leftovers in an airtight container for later enjoyment.
