Peach-Infused Turkey Burger Salad with Endive, Bacon, Avocado, and Gorgonzola

Ingredients
1 | tablespoon canola oil |

½ | red onion, chopped |
½ | jalapeno pepper, seeded and minced |
2 | cloves garlic, minced |
1 | pound pound ground turkey |
1 | tablespoon gluten-free teriyaki sauce (such as Kikkoman®) |
1 | tablespoon tamari (gluten-free soy sauce) |
1 | peach, halved, divided |
salt and ground black pepper to taste | |
1 | head endive, chopped |
1 | (5 ounce) bag spring mix lettuce |
1 | firm ripe avocado, cubed |
¼ | cup crumbled Gorgonzola cheese |
4 | bacon strips, cooked and chopped |
Instructions
1. | In a skillet, heat canola oil over medium heat. Add chopped onion, jalapeno, and minced garlic. Cook until the onions are translucent, for about 10 to 12 minutes. Allow the mixture to cool to room temperature, approximately 15 minutes. |

2. | Combine the cooled onion mixture with ground turkey, teriyaki sauce, and soy sauce in a bowl. Gently mix in half of the peach, chopped. Season the turkey mixture with salt and pepper, then form it into 4 patties. |
3. | Preheat the grill to medium heat and lightly oil the grate. |
4. | Grill the turkey burgers until they are no longer pink in the center and the juices run clear, about 4 minutes per side. Ensure the internal temperature reaches at least 165 degrees F (74 degrees C) by using an instant-read thermometer. |
5. | In a separate bowl, combine the chopped endive with the spring mix lettuce. Top the greens with cubed avocado, crumbled Gorgonzola cheese, and chopped bacon. Serve the salad alongside the turkey burgers. |
