A heavenly dessert that combines the freshness of peppermint with the richness of white chocolate, creating a delightful treat for any occasion.

Ingredients

1 (17 ½ ounce) package sugar cookie mix
2 tablespoons flour
½ cup butter (basically, one stick)
4 egg yolks
1 (14 ounce) can sweetened condensed milk
½ teaspoon peppermint extract
½ cup crushed peppermint candy
cup heavy whipping cream
8 ounces white chocolate chips or 8 ounces white almond bark

Instructions

    1. Preheat the oven to 350°F and line a 13x9 inch baking pan with tin foil, leaving an overhang on the sides. Grease the tin foil.
    2. For the Crust: In a mixing bowl, combine the sugar cookie mix and flour. Cut in the butter until the mixture resembles fine crumbs. Press the mixture into the greased pan and bake for approximately 15 minutes or until the edges are lightly browned.
    3. For the Middle Layer: While the crust is baking, whisk together the egg yolks, sweetened condensed milk, and peppermint extract until fully combined. Stir in the crushed peppermint candy. Once the crust is baked, carefully pour the mixture over it and bake for 20-25 minutes. Allow it to cool on the counter for an hour, then chill in the fridge for another 30 minutes.
    4. White Chocolate Ganache: Heat the heavy whipping cream until it is just about to boil. Remove from heat and add the white chocolate chips. Let it sit for five minutes without stirring, then stir until smooth. Pour the ganache over the cooled bars, spreading it evenly. Refrigerate for an hour until set. Cut into bars to make about 36 servings.
