5 sliced, peeled fresh peaches
½ cup clover honey, divided in half and warmed
¼ teaspoon nutmeg
¼ teaspoon cinnamon
¼ teaspoon mace
1 extra large egg
3 tablespoons melted unsalted butter
cup whole milk
½ cup organic unbleached flour
2 teaspoons Rumford baking powder
teaspoon fine sea salt
¼ cup toasted wheat germ

Instructions

    1. Preheat the oven to 375°F. Grease a 9 x 13-inch baking dish with butter. In a bowl, mix the fresh sliced peaches with 1/4 cup of honey, nutmeg, cinnamon, and mace. Transfer the peach mixture into the baking dish.
    2. In another bowl, beat the extra-large egg with 1/4 cup of warmed honey, melted unsalted butter, and whole milk. Sift the organic unbleached flour with Rumford baking powder and fine sea salt. Add toasted wheat germ to the mixture and combine well. Spread the batter evenly over the peaches in the baking dish. Bake in the preheated oven for about 30 minutes or until the crust is crispy and golden brown. Serve the peach cobbler warm, accompanied by whipped cream or ice cream.
