These sliders keep the party-roll format while moving the filling closer to a classic Philly cheesesteak: thinly shaved beef, griddled onions, and melted provolone. A short bake warms the rolls and sets the cheese without turning the steak into a casserole-style filling.

| 1. | If the steak is not already shaved, freeze it until firm but not solid, about 20 minutes, then slice it as thinly as possible across the grain. |

| 3. | Heat 1 tablespoon oil in a large cast-iron skillet or griddle over medium-high heat. |
| 4. | Add the onion and remaining 1/2 teaspoon kosher salt, then cook, stirring often, until softened and lightly browned, 8 to 10 minutes. |
| 5. | Transfer the onions to a bowl and wipe the skillet clean if any browned bits look too dark. |
