2 tablespoons vegetable oil
12 cup diced sweet onion
1 tablespoon grated ginger root
1 minced garlic
1 12 fresh pineapple chunks
12 diced red bell pepper
13 cup thawed frozen peas
2 cold, cooked white rice
2 tablespoons low-sodium soy sauce, or to taste
1 teaspoon sesame oil
2 tablespoons sliced green onion
1 teaspoon toasted sesame seeds

Instructions

    1. Begin by heating vegetable oil in a large skillet over medium heat. Sauté the diced sweet onion for about 1 minute until translucent. Add in the grated ginger and minced garlic, stirring constantly for an additional 1 minute.
    2. Increase the heat to medium-high. Incorporate the fresh pineapple chunks, diced red bell pepper, and peas. Stir continuously for 3 to 4 minutes. Introduce the cold, cooked white rice and low-sodium soy sauce, ensuring an even distribution of flavors for 1 to 2 minutes. Finish by adding sesame oil and removing from heat.
    3. Before serving, elegantly garnish with sliced green onion and toasted sesame seeds.
