Pumpkin & Cheese Ravioli with Savory Sauce

Instructions
1. | Begin by filling a large pot with lightly salted water, bringing it to a rolling boil. Gently stir in the ravioli and allow it to return to a boil. Cook uncovered, stirring occasionally, until the ravioli float to the top and the filling is heated through, approximately 6 to 8 minutes. Drain the ravioli. |

Stir in the milk, pumpkin puree, Pecorino Romano cheese, brown sugar, cinnamon, 2 teaspoons of salt, and nutmeg into the mascarpone cheese mixture. Bring the sauce to a gentle boil, then reduce the heat to low and simmer until the sauce thickens, around 5 to 10 minutes. Add the cooked ravioli to the sauce, tossing gently to coat.
