1 red onion, thinly sliced
1 cup vinegar (rice vinegar or white wine vinegar)
1 teaspoon sugar or sweet mirin
1 cup water
generous pinch of kosher salt

Instructions

  • For pickled onions

    1. Slice the red onion as thin as possible, using a mandolin if available.
    2. In a jar with a lid or nonreactive bowl, combine the red onion, vinegar, sugar or sweet mirin, water, and a generous pinch of kosher salt.
