A delightful dish of roasted spaghetti squash stuffed with a flavorful mixture of Italian sausage, zucchini, and Ragu spicy Italian sauce, topped with breadcrumbs and goat cheese.

Ingredients

1 cup Ragu® Pasta Sauce (spicy Italian sauce)
1 large spaghetti squash, seeds removed
1 lb Italian sausage, browned
3 cups medium zucchini, chopped
2 cups large yellow onion, diced
4 garlic cloves, minced
3 tablespoons chopped oregano
4 tablespoons butter
1 cup panko Italian seasoned breadcrumbs
4 ounces goat cheese, crumbled
1 teaspoon salt
1 teaspoon pepper

Instructions

    1. Preheat the oven to 400°F.
    2. Carefully split the large spaghetti squash lengthwise, remove all seeds using a spoon, then generously drizzle with olive oil and season with salt and pepper.
    3. Place the squash halves cut side down on a baking sheet and roast for 45-60 minutes until just tender enough to be fluffed with a fork. Cooking time may vary based on the size of the squash.
    4. While the squash is roasting, dice the vegetables and sauté the Italian sausage until browned in a large skillet. Add half of the butter and the diced onion, cooking until tender.
    5. Stir in the minced garlic, chopped zucchini, and Ragu spicy Italian sauce. Simmer until the vegetables are tender, then season with chopped oregano, salt, and pepper.
    6. Once the squash is tender, use a fork to gently separate the flesh from the skin. Divide the sausage and vegetable mixture between the two squash halves, then sprinkle crumbled goat cheese over the top.
    7. In a small bowl, melt the remaining butter and mix in the Italian seasoned breadcrumbs. Sprinkle this mixture evenly over the stuffed squash halves, ensuring the sausage and vegetable filling is well covered.
    8. Return the stuffed squash to the oven and bake for 15 minutes or until the breadcrumbs are golden brown.
    9. Allow the dish to cool for 5 minutes before serving. Garnish with the reserved teaspoon of chopped oregano and savor the flavors!
