Rice and Cheese Pie Crust

A delicious and wholesome alternative to traditional pie crusts, this Rice and Cheese Pie Crust is both flavorful and easy to make.
Ingredients
Nonstick cooking spray | |
2 | cups cooked rice (Lundberg’s short grain is my favorite to use) |
1⁄4 | cup shredded cheese of your choice, grated on the large holes of a box grater |
1 | large egg white |
Instructions
1. | Preheat the oven to 350°F. |

2. | Prepare a 10-inch pie pan by lightly greasing it with nonstick cooking spray and set it aside. |
3. | In a mixing bowl, combine the cooked rice, shredded cheese, and egg white. |
4. | Press the rice and cheese mixture evenly over the bottom and along the sides of the pie pan. |
5. | Bake the crust in the preheated oven, uncovered, for 5 minutes until set and slightly golden. |
6. | Allow the crust to cool while you prepare the filling. |
