Rice and Cheese Pie Crust

A delicious and wholesome alternative to traditional pie crusts, this Rice and Cheese Pie Crust is both flavorful and easy to make.

Ingredients

Nonstick cooking spray
2 cups cooked rice (Lundberg’s short grain is my favorite to use)
14 cup shredded cheese of your choice, grated on the large holes of a box grater
1 large egg white

Instructions

    1. Preheat the oven to 350°F.
    2. Prepare a 10-inch pie pan by lightly greasing it with nonstick cooking spray and set it aside.
    3. In a mixing bowl, combine the cooked rice, shredded cheese, and egg white.
    4. Press the rice and cheese mixture evenly over the bottom and along the sides of the pie pan.
    5. Bake the crust in the preheated oven, uncovered, for 5 minutes until set and slightly golden.
    6. Allow the crust to cool while you prepare the filling.
