A delightful roasted sweet potato topped with sauteed onions, red peppers, vegetarian meat, and a dollop of yogurt. This dish is simple yet satisfying, perfect for a weeknight meal and easily customizable based on available ingredients.

Ingredients

1 large sweet potato
1 teaspoon olive oil
½ sweet onion, sliced
1 red bell pepper, cut into strips
1 roasted green chile pepper, chopped
¼ cup vegetarian ground beef
¼ cup plain yogurt
salt and ground black pepper to taste

Instructions

    1. Preheat the oven to 350 degrees F (175 degrees C).
    2. Place the sweet potato on a baking sheet and bake until tender, approximately 30 minutes.
    3. In a skillet, heat olive oil over medium heat. Saute the sliced sweet onion, red bell pepper, and roasted green chile pepper until very tender, around 15 minutes.
    4. Add the vegetarian ground beef to the skillet and cook until heated through, about 5 minutes.
    5. Slice the cooked sweet potato in half lengthwise, place the sauteed mixture on top, add a dollop of plain yogurt, and season with salt and black pepper.
