Roasted Sweet Potato with Sauteed Onions and Peppers
A delightful roasted sweet potato topped with sauteed onions, red peppers, vegetarian meat, and a dollop of yogurt. This dish is simple yet satisfying, perfect for a weeknight meal and easily customizable based on available ingredients.
Ingredients
1 | large sweet potato |

1 | teaspoon olive oil |
½ | sweet onion, sliced |
1 | red bell pepper, cut into strips |
1 | roasted green chile pepper, chopped |
¼ | cup vegetarian ground beef |
¼ | cup plain yogurt |
salt and ground black pepper to taste |
Instructions
1. | Preheat the oven to 350 degrees F (175 degrees C). |

2. | Place the sweet potato on a baking sheet and bake until tender, approximately 30 minutes. |
3. | In a skillet, heat olive oil over medium heat. Saute the sliced sweet onion, red bell pepper, and roasted green chile pepper until very tender, around 15 minutes. |
4. | Add the vegetarian ground beef to the skillet and cook until heated through, about 5 minutes. |
5. | Slice the cooked sweet potato in half lengthwise, place the sauteed mixture on top, add a dollop of plain yogurt, and season with salt and black pepper. |
