   This flavorful and comforting tortellini soup features savory sausage, fresh spinach, and juicy tomatoes, creating a dish that is sure to please any crowd.
| 1 | pound mild sausage, removed from casings |

| 1 | medium onion, finely chopped | 
| 6 | cloves garlic, finely chopped | 
| 1 | ((32 ounce)) carton chicken broth | 
| 1 | ((14 ounce)) can chicken broth | 
| 1 | pound frozen cheese tortellini | 
| 1 | ((14 ounce)) can diced tomatoes | 
| 1 | ((10 ounce)) package fresh spinach, coarsely chopped | 
| 10 | leaves fresh basil, chopped | 
| 1⁄2 | teaspoon red pepper flakes, or to taste (Optional) | 
| 1 | pinch salt and ground black pepper to taste (Optional) | 
| 1⁄2 | cup grated Parmesan cheese, or as needed |

| 1. | Heat a large pot over medium-low heat. Cook the mild sausage and finely chopped onion until the onion is soft and translucent, breaking up the sausage as it cooks, for 5 to 7 minutes. Add the finely chopped garlic and cook for an additional 1 to 2 minutes. | 
| 2. | Pour all the chicken broth into the pot and bring it to a boil, approximately 5 minutes. Add the frozen cheese tortellini and cook for an additional 5 minutes. Mix in the diced tomatoes with their juice and bring the soup back to a boil. Reduce the heat to low and let the soup simmer for 10 minutes. | 
| 3. | Stir in the coarsely chopped spinach; it may seem like a lot, but it will wilt quickly. Add the chopped fresh basil and red pepper flakes, then simmer for an extra 5 minutes. Season the soup with salt and ground black pepper to taste. | 
| 4. | Serve the soup with grated Parmesan cheese on the side for your guests to add as desired. |
