- Heat a large pot over medium-low heat. Cook the mild sausage and finely chopped onion until the onion is soft and translucent, breaking up the sausage as it cooks, for 5 to 7 minutes. Add the finely chopped garlic and cook for an additional 1 to 2 minutes.
- Pour all the chicken broth into the pot and bring it to a boil, approximately 5 minutes. Add the frozen cheese tortellini and cook for an additional 5 minutes. Mix in the diced tomatoes with their juice and bring the soup back to a boil. Reduce the heat to low and let the soup simmer for 10 minutes.
- Stir in the coarsely chopped spinach; it may seem like a lot, but it will wilt quickly. Add the chopped fresh basil and red pepper flakes, then simmer for an extra 5 minutes. Season the soup with salt and ground black pepper to taste.
- Serve the soup with grated Parmesan cheese on the side for your guests to add as desired.
