Ingredients

1 lb ground sausage meat
3 stalks celery, chopped
1 tablespoon sage
1 teaspoon thyme
1 teaspoon marjoram
10 cups cubed bread (stale works best)
2 onions, sliced
2 apples, peeled, cored, cut into small cubes
1 14 cups chicken stock
12 cup fresh parsley, chopped

Instructions

For the Apple-Sausage Stuffing

1. Begin by cooking the ground sausage meat in a skillet over medium heat until no longer pink, about 10 minutes, stirring often.
2. Drain most of the fat from the skillet, leaving about a tablespoon behind.
3. Add in the chopped onions and celery, and cook for an additional 3 minutes until softened.
4. Stir in the cubed apples, sage, thyme, and marjoram, cooking for another 5 minutes to blend the flavors.
5. Pour in 1 cup of chicken stock, bring the mixture to a boil, then remove from heat.
6. Stir in the cubed bread, chopped parsley, salt, and pepper until well combined.
7. Transfer the stuffing mixture into a lightly greased casserole dish.
8. If preparing ahead, the stuffing can be refrigerated for up to 2 days, or frozen for up to 2 weeks (thaw in the fridge before baking).
9. Bake the stuffing covered in a preheated 325°F oven for about 40 minutes. Halfway through baking, drizzle with the remaining chicken stock.
10. Remove the lid and bake for an additional 10 minutes until the stuffing forms a crispy, golden top and is heated through.
