Savory Pear and Bacon Galette

A delightful and savory galette featuring a perfect combination of sweet pears, crispy bacon, and warm spices, all wrapped in a flaky crust.

Ingredients

1 18 cups all-purpose flour
12 teaspoon salt
1 teaspoon sugar
8 tablespoons cold, unsalted butter, cut into pieces
4 tablespoons ice water
5 bacon, chopped into ½-inch pieces
2 pears, peeled (I used red d'Anjou)
1 lemon
14 teaspoon cinnamon
1 teaspoon sugar

Instructions

    1. In a food processor, combine the all-purpose flour, salt, and sugar. Pulse briefly to mix the dry ingredients. Add the cold, unsalted butter pieces and process until the mixture resembles cornmeal.
    2. Transfer the mixture to a bowl and drizzle the ice water over it. Using a rubber spatula or your hands, gently incorporate the water until a dough ball forms. Wrap the dough in plastic wrap, flatten it into a disk, and chill in the freezer for 10 minutes.
    3. Preheat the oven to 350F (180C). Cook the bacon in a skillet over medium heat until almost crispy. Transfer the bacon to a plate lined with paper towels to drain, and reserve the bacon fat for greasing the baking sheet.
    4. Halve and core the peeled pears, then slice them thinly lengthwise (about 1/8 inch thick). Place the pear slices in a bowl and add sugar, cinnamon, and the zest of the lemon. Squeeze the lemon juice over the pears and gently toss to coat. Once the bacon has cooled slightly, add it to the bowl and toss again.
    5. Retrieve the chilled dough from the freezer. Roll it out between two sheets of plastic wrap to about 1/4 inch thickness, forming a large circle. Remove the top sheet of plastic and carefully flip the crust onto the bacon-greased baking sheet. Peel off the remaining plastic wrap.
    6. Spread the prepared filling in the center of the crust, leaving a 2-inch border. Fold the excess crust over the edges of the filling, leaving the center exposed.
    7. Bake the galette for 40-45 minutes at 350F (180C) until the crust is golden brown. Allow it to cool for 10 minutes before serving. Enjoy this savory treat!
