2 lbs sweet potatoes, boiled, peeled, and diced
1 12 cups mayonnaise
2 teaspoons Dijon mustard
14 teaspoon salt
4 hard-boiled eggs, chopped
1 12 cups finely chopped celery
8 green onions, sliced

Instructions

  • Preparation

    1. Place the sweet potatoes in a large saucepan and cover them with water. Bring to a gentle boil and cook until the potatoes are easily pierced with a sharp knife, approximately 30-45 minutes. Drain.
    2. Once the potatoes have cooled, peel and dice them. In a large bowl, mix together the mayonnaise, Dijon mustard, and salt.
    3. Add the chopped hard-boiled eggs, celery, and green onions to the bowl. Gently stir in the diced sweet potatoes until well combined.
