Ingredients

12 tablespoon olive oil
14 small onion, chopped fine
1 clove garlic, chopped fine
splash of wine wine (** optional)
1 12 pounds ground turkey, lean
1 large egg, beaten
1 10-oz. package frozen chopped spinach, thawed & squeezed in paper towels to remove excess moisture
12 cup finely grated Parmesan
12 cup dried breadcrumbs (it's nice make your own from left-over homemade bread)
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon fennel seeds
1 teaspoon finely grated lemon zest
1 teaspoon kosher salt

Instructions

  • Preparation

    1. Preheat the oven to 400°F (200°C).
    2. In a small saucepan, sauté the finely chopped onion in 1/2 tablespoon of olive oil until beginning to soften. Add the finely chopped garlic and cook for 30 seconds more. Stir in the spinach and cook for an additional minute. For added flavor, consider adding a small splash of wine and let the mixture reduce for a minute or two.
    3. Allow the mixture to cool.
    4. In a food processor, combine all ingredients except for the ground turkey. Pulse two or three times until mixed.
    5. In a large bowl, gently mix the processed ingredients with the ground turkey until just combined.
    6. Cover the mixture and chill in the refrigerator for at least an hour.
    7. Shape the meatball mixture into rounds using your hands and place them in individual miniature muffin tin cups. You should have approximately 20 meatballs.
    8. Bake for 18-20 minutes or until the meatballs are golden and cooked through. For extra crispiness and browning, place them under the broiler for a few seconds.
