Ingredients

2 pork tenderloin
2 teaspoons fresh ground black pepper
¼-½ teaspoon cumin
1 teaspoon chili powder
1 teaspoon cinnamon
2-3 tablespoons olive oil
1 cup brown sugar
2 tablespoons finely chopped garlic
1 teaspoon Tabasco sauce (adjust to suit heat level)

Instructions

    1. Combine salt, black pepper, cumin, chili powder, and cinnamon in a small bowl.
    2. Massage the spice mixture onto the pork tenderloins, ensuring they are evenly coated.
    3. Preheat a large, heavy oven-proof skillet with olive oil over medium-high heat until it is very hot.
    4. Sear the tenderloins in the skillet, ensuring all sides are nicely browned. Leave them in the skillet.
    5. Preheat the oven to 350°F.
    6. For the glaze, mix together brown sugar, finely chopped garlic, and Tabasco sauce. Spread this mixture over the top of each tenderloin.
    7. Roast the tenderloins in the middle of the oven for approximately 20-22 minutes or until a thermometer reads 140°F.
    8. Allow the pork to rest in the skillet at room temperature for 10 minutes (the internal temperature will rise to around 155°F during this resting period).
    9. Transfer the pork tenderloins to a cutting board and slice them before serving.
