Instructions

- Combine salt, black pepper, cumin, chili powder, and cinnamon in a small bowl.
- Massage the spice mixture onto the pork tenderloins, ensuring they are evenly coated.
- Preheat a large, heavy oven-proof skillet with olive oil over medium-high heat until it is very hot.
- Sear the tenderloins in the skillet, ensuring all sides are nicely browned. Leave them in the skillet.
- Preheat the oven to 350°F.
- For the glaze, mix together brown sugar, finely chopped garlic, and Tabasco sauce. Spread this mixture over the top of each tenderloin.
- Roast the tenderloins in the middle of the oven for approximately 20-22 minutes or until a thermometer reads 140°F.
- Allow the pork to rest in the skillet at room temperature for 10 minutes (the internal temperature will rise to around 155°F during this resting period).
- Transfer the pork tenderloins to a cutting board and slice them before serving.
