Sesame-Ginger Tofu Stir-Fry with Asparagus

4 | green onions, sliced (white and green parts) |
1 | lb fresh asparagus |
1 | cup mushroom, sliced |
1⁄4 | cup reduced sodium soy sauce |
2 | tablespoons lime juice |
5 | tablespoons water |
1 | teaspoon cornstarch |
2 | tablespoons canola oil or peanut oil |
Instructions
For Marinating Tofu | |

1. | Place the firm tofu between paper towels to press out excess liquid for 30 minutes. Slice the tofu into 1-inch thick pieces and marinate in a mixture of rice vinegar, sesame oil, soy sauce, honey, ginger, garlic, and chili sauce. Refrigerate for 2-4 hours, turning the slices halfway through. |
For Stir-Fry | |
1. | Prepare the asparagus by washing and slicing them into 1-inch pieces. Save the marinade from the tofu. |
2. | Pat dry the marinated tofu and cut into 1-inch cubes. In a bowl, mix the reserved marinade with soy sauce, lime juice, water, and cornstarch. |
