Ingredients

For Marinating Tofu

16 ounces firm tofu, drained
4 tablespoons rice vinegar
1 tablespoon sesame oil
2 tablespoons reduced sodium soy sauce
1 tablespoon honey
1 tablespoon fresh ginger, minced
2 garlic cloves, peeled and minced
3 tablespoons Thai sweet chili sauce

For Stir-Fry

4 green onions, sliced (white and green parts)
1 lb fresh asparagus
1 cup mushroom, sliced
14 cup reduced sodium soy sauce
2 tablespoons lime juice
5 tablespoons water
1 teaspoon cornstarch
2 tablespoons canola oil or peanut oil

Instructions

  • For Marinating Tofu

    1. Place the firm tofu between paper towels to press out excess liquid for 30 minutes. Slice the tofu into 1-inch thick pieces and marinate in a mixture of rice vinegar, sesame oil, soy sauce, honey, ginger, garlic, and chili sauce. Refrigerate for 2-4 hours, turning the slices halfway through.
  • For Stir-Fry

    1. Prepare the asparagus by washing and slicing them into 1-inch pieces. Save the marinade from the tofu.
    2. Pat dry the marinated tofu and cut into 1-inch cubes. In a bowl, mix the reserved marinade with soy sauce, lime juice, water, and cornstarch.
    3. Stir-fry the tofu until golden brown, then set aside. Stir-fry the asparagus, green onions, and mushrooms until the asparagus is tender.
    4. Return the tofu to the pan and add the marinade mixture. Bring to a boil and cook until slightly thickened. Serve over rice or noodles.
