1 teaspoon mirin, rice wine or dry sherry
1 teaspoon cornstarch

2 cloves garlic, chopped
12 tablespoon minced ginger
1 onion, cut into 16 segments
1 large carrot, shredded
1 stalk celery, shredded
2 whole green onions, cut into 1 inch pieces
14 lb bean sprouts
12 lb thick cantonese noodles or shanghai noodles, cooked

Instructions

1. Begin by combining the ingredients to create a flavorful marinade.
2. Add the shredded pork to the marinade and let it marinate for 30 minutes to absorb the flavors.
3. Prepare the seasoning liquid by mixing soy sauce, water, sesame oil, oyster sauce, chili paste, sugar, mirin, and cornstarch. Set it aside next to the wok for easy access.
4. Heat up the wok on high heat for 3 minutes before adding vegetable oil.
5. Quickly add chopped garlic and minced ginger to infuse the oil, followed by all the vegetables except for the green onions and bean sprouts.
6. Toss the vegetables and add a tablespoon of water. Cover and cook until the vegetables are tender, approximately 1 minute.
