2 cups short-grain rice or sushi rice
2 14 cups water
4 tablespoons sushi vinegar
1 teaspoon salt
8 ounces sashimi-grade tuna, raw and chopped
14 cup mayonnaise
1 teaspoon sriracha sauce
2 ripe avocados, peeled and thinly sliced
1 bunch green onion, thinly sliced
tobiko (flying fish roe)
wasabi
nori

Instructions

  • Preparation

    1. Rinse the short-grain or sushi rice in a colander until the water runs clear. Cook the rice in a pot or rice cooker with water, sushi vinegar, rice vinegar, sugar, and salt. Let it cool in a large non-metallic bowl.
    2. Layer the cooked rice in a pie plate or serving dish. Cover the rice with thinly sliced avocado.
    3. In a bowl, mix the chopped sashimi-grade tuna with mayonnaise and sriracha sauce. Spread the tuna mixture evenly over the avocado.
    4. Sprinkle sliced green onions, chopped cucumber, and tobiko over the tuna. For extra spice, add decorative patterns of sriracha sauce.
    5. Serve with small dipping bowls of wasabi and soy sauce. Provide quartered squares of nori for rolling individual sushi rolls.
