For Brining

1 cup Morton Tender Quick salt
12 cup brown sugar
2 tablespoons liquid smoke
12 gallon water (or enough water to cover pieces)
10 turkey legs (turkey wings, whole turkey, or whole chicken)

Instructions

  • For Brining and Roasting

    1. Combine Morton Tender Quick salt, brown sugar, liquid smoke, and water. Ensure everything is dissolved and pour the brine over the turkey drumsticks.
    2. Refrigerate the brined turkey drumsticks in a covered container for 24 to 72 hours.
    3. After brining, rinse off the brine, pat the turkey drumsticks dry with paper towels, and roast them at 350°F for approximately 45 minutes.
    4. To achieve a deeper color, increase the oven temperature to 500°F. Roast the drumsticks until they develop a rich mahogany color. Flip them over to roast the other side until browned.
