- Note: Chipotle chile peppers come packed in adobo sauce and are available in seven-ounce cans. It adds a rich, smoky flavor to dishes.
- To preserve the remaining chipotle peppers, freeze them in a heavy-duty freezer bag for future use.
- Begin by placing the coarsely chopped peeled sweet potatoes in a saucepan and covering them with water. Bring the water to a gentle boil.
- Reduce the heat and simmer the sweet potatoes for about 15 minutes, or until they are tender. Drain the water and return the potatoes to the pan.
- Add the maple syrup, milk (use soy milk for a gluten-free option), butter, adobo sauce, salt, black pepper, and minced chipotle chile in adobo to the pan with the sweet potatoes.
- Using a mixer at medium speed, beat the ingredients until smooth and well combined, creating a flavorful and creamy sweet potato mash.
