A delicious and unique twist on traditional mashed sweet potatoes with a smoky kick from chipotle peppers in adobo sauce.

Ingredients

1 lb coarsely chopped peeled sweet potato
2 tablespoons maple syrup
2 tablespoons milk (soy milk for gluten free)
1 tablespoon butter
1 ½ teaspoons adobo sauce
¼ teaspoon salt
teaspoon black pepper
½ drained canned chipotle chile in adobo, minced

Instructions

    1. Note: Chipotle chile peppers come packed in adobo sauce and are available in seven-ounce cans. It adds a rich, smoky flavor to dishes.
    2. To preserve the remaining chipotle peppers, freeze them in a heavy-duty freezer bag for future use.
    3. Begin by placing the coarsely chopped peeled sweet potatoes in a saucepan and covering them with water. Bring the water to a gentle boil.
    4. Reduce the heat and simmer the sweet potatoes for about 15 minutes, or until they are tender. Drain the water and return the potatoes to the pan.
    5. Add the maple syrup, milk (use soy milk for a gluten-free option), butter, adobo sauce, salt, black pepper, and minced chipotle chile in adobo to the pan with the sweet potatoes.
    6. Using a mixer at medium speed, beat the ingredients until smooth and well combined, creating a flavorful and creamy sweet potato mash.
