Somalian Sambusas
These Somalian Sambusas are delicious fried pastries made with spring roll wrappers filled with a flavorful mixture of seasoned ground beef, onion, leek, and aromatic spices.

1 | leek, chopped |
1 | clove garlic, minced |
2 | pounds ground beef |
2 | teaspoons ground cumin |
2 | teaspoons ground cardamom |
1 | teaspoon salt |
1 | teaspoon pepper |
1 | tablespoon all-purpose flour |
1 | tablespoon water, or as needed |
1 | (14 ounce) package spring roll wrappers |
1 | quart oil for frying, or as needed |
Instructions
1. | In a large skillet, heat olive oil over medium heat. Sauté finely chopped onion, chopped leek, and minced garlic until the onion turns transparent. Add the ground beef and cook until it is halfway done and slightly pink. Season the mixture with ground cumin, ground cardamom, salt, and pepper, ensuring all ingredients are well combined. Continue cooking until the beef is browned and crumbly. Remove the skillet from the heat. |

2. | Prepare a thin paste by mixing all-purpose flour and water in a small bowl. Take one spring roll wrapper at a time and fold it into a cone shape. Fill the cone with the beef mixture, tightly close the top, and seal it with the prepared paste. Repeat the process until all wrappers or filling are used. |
3. | Heat oil in a deep fryer or large saucepan to 365 degrees F (170 degrees C). Ensure there is enough oil to completely submerge the Sambusas. Fry the Sambusas in batches until they turn golden brown. Remove the fried Sambusas and place them on a paper towel-lined plate to drain excess oil. |
