For the ice cream base | |

2 | cups milk |
3 | ⁄4 cup sugar |
8 | egg yolks |
1 | teaspoon vanilla extract |
For the cherry infusion | |
1 1⁄2 | ounces Cointreau |
2 | cups cherries, pitted and roughly chopped, juices reserved |
1⁄2 | teaspoon orange zest, finely zested |
Instructions
For the ice cream base | |

1. | Heat the milk and cream with half of the sugar until it comes to a boil. In a separate bowl, whisk together the egg yolks with the remaining sugar until the mixture thickens. |
2. | Temper the eggs by slowly adding 1/3 of the hot milk mixture while whisking continuously until well combined. |
3. | Pour the egg mixture back into the pot with the milk and continue heating while stirring until it thickens enough to coat the back of a wooden spoon. Add in the vanilla extract. Remove from heat, strain the mixture into a bowl over an ice bath. |
4. | Allow the mixture to cool, then refrigerate for several hours or overnight. |
For the cherry infusion | |
1. | Pit and roughly chop 2 cups of cherries, saving any juices produced during chopping. When the custard base is ready, combine it with Cointreau and orange zest in an ice cream maker. Process according to the manufacturer's instructions. |
2. | Just before the ice cream is done, add in the chopped cherries and their juices. Process until well incorporated. Transfer the ice cream to a container and freeze or serve immediately for a fresh taste straight from the ice cream maker. |
