12 lb unsalted butter, at room temperature
1 cup confectioners' sugar, plus additional for sprinkling
1 egg yolk, at room temperature
1 tablespoon cognac
2 cups flour

    1. Begin by placing the unsalted butter in the mixer bowl and beating until smooth.
    2. Scrape down the sides of the bowl and gradually add the confectioners' sugar, blending until well incorporated.
    3. Scrape down the sides again and add the egg yolk and the cognac, mixing well.
    4. Gradually incorporate the flour into the mixture until well combined.
    5. Cover the dough with waxed paper or plastic wrap and refrigerate for at least 3-4 hours, or freeze for up to 2 weeks.
    6. Preheat the oven to 325ºF (165ºC).
    7. To shape the cookies, break off small pieces of dough and roll them into 1-inch balls.
    8. Place the dough balls on an ungreased cookie sheet.
    9. Bake the cookies until they are very lightly browned, approximately 20-25 minutes.
    10. Allow the cookies to cool for 2 minutes on the sheet, then transfer them to a cooling rack.
    11. Once cooled, sprinkle the cookies with additional confectioners' sugar for an extra touch of sweetness.
