- Begin by placing the unsalted butter in the mixer bowl and beating until smooth.
- Scrape down the sides of the bowl and gradually add the confectioners' sugar, blending until well incorporated.
- Scrape down the sides again and add the egg yolk and the cognac, mixing well.
- Gradually incorporate the flour into the mixture until well combined.
- Cover the dough with waxed paper or plastic wrap and refrigerate for at least 3-4 hours, or freeze for up to 2 weeks.
- Preheat the oven to 325ºF (165ºC).
- To shape the cookies, break off small pieces of dough and roll them into 1-inch balls.
- Place the dough balls on an ungreased cookie sheet.
- Bake the cookies until they are very lightly browned, approximately 20-25 minutes.
- Allow the cookies to cool for 2 minutes on the sheet, then transfer them to a cooling rack.
