A hearty and flavorful one-pot meal where ground beef and rice are delicately sauteed with onions and bell peppers, then simmered with sweet corn and a savory tomato-based sauce.

Ingredients

2 tablespoons vegetable oil
1 cup uncooked converted white rice
½ cup chopped onion
½ cup chopped green bell pepper
1 pound ground beef
1 cup canned corn
1 (6 ounce) can tomato sauce
½ cup ketchup
1 cup water
salt and pepper to taste
garlic powder to taste

Instructions

1. Heat the vegetable oil in a large saucepan over medium heat. Add the rice, onion, and green bell pepper. Saute for 5 minutes until the onions are tender.
2. Add the ground beef and saute until browned. Remove any excess oil and fat.
3. Stir in the corn, tomato sauce, ketchup, and water. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked, stirring occasionally.
4. Season with salt, pepper, and garlic powder to taste.
