Spanish Beef and Rice Casserole
A hearty and flavorful one-pot meal where ground beef and rice are delicately sauteed with onions and bell peppers, then simmered with sweet corn and a savory tomato-based sauce.
Ingredients
2 | tablespoons vegetable oil |

1 | cup uncooked converted white rice |
½ | cup chopped onion |
½ | cup chopped green bell pepper |
1 | pound ground beef |
1 | cup canned corn |
1 | (6 ounce) can tomato sauce |
½ | cup ketchup |
1 | cup water |
salt and pepper to taste | |
garlic powder to taste |
Instructions
1. | Heat the vegetable oil in a large saucepan over medium heat. Add the rice, onion, and green bell pepper. Saute for 5 minutes until the onions are tender. |

2. | Add the ground beef and saute until browned. Remove any excess oil and fat. |
3. | Stir in the corn, tomato sauce, ketchup, and water. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked, stirring occasionally. |
4. | Season with salt, pepper, and garlic powder to taste. |
