Prepare a delightful and vibrant Spanish chicken and rice meal effortlessly using an Instant Pot.

Ingredients

1 ½ pounds bone-in, skin-on chicken thighs
1 pinch salt, or more to taste
2 tablespoons olive oil
1 red bell pepper, diced
½ onion, sliced
3 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground red pepper
1 teaspoon dried oregano
½ teaspoon ground white pepper
1 pinch red pepper flakes
1 pound tomatoes, diced
1 ½ chicken broth
1 cup long-grain rice
1 cup frozen peas, partially thawed

Instructions

    1. Season each chicken thigh generously with salt.
    2. Begin by activating the Saute function on a multi-functional pressure cooker (such as Instant Pot), heating up olive oil. Place chicken thighs in the pot and sear until they develop a golden brown crust, approximately 3 minutes per side. Once browned, set them aside.
    3. Add diced bell pepper, sliced onion, and minced garlic to the pressure cooker. Saute until the vegetables start to soften, which should take about 1 minute. Incorporate salt, cumin, ground red pepper, oregano, white pepper, and red pepper flakes into the mix. Stir well. Continue to cook until the onion becomes translucent and tender, for about 3 to 5 minutes, ensuring not to burn it.
    4. Introduce diced tomatoes and chicken broth into the pressure cooker. Bring the mixture to a boil while scraping the bottom to release any flavorful browned bits.
    5. Add long-grain rice into the pot. Nestle the chicken thighs back into the pot on top of the rice. Seal the lid securely. Opt for high pressure as per the manufacturer's guidelines; set the timer for 12 minutes. Allow the pressure to build for 10 to 15 minutes.
    6. When the cooking is complete, release the pressure naturally following the manufacturer's instructions, which should take around 15 minutes. Unlock and remove the lid. Stir in the partially thawed frozen peas. Close and secure the lid again to heat the peas through, taking approximately 5 minutes.
