½ cup milk
6 whole cardamom pods, cracked open
2 star anise pods, whole
1 cinnamon stick
2 egg yolks
2 ounces granulated sugar
1 teaspoon gelatin
2 tablespoons cold water
3 ounces dark chocolate, melted
¼ teaspoon sea salt
½ teaspoon vanilla
½ cup whipping cream

Instructions

    1. Begin by infusing the milk in a small saucepan with the cracked whole cardamom pods, whole star anise pods, and a cinnamon stick. Bring the milk to a gentle simmer, then remove from heat. Cover and allow the spices to permeate the milk for 15 minutes.
    2. In the meantime, in a medium bowl, whisk together the egg yolks and granulated sugar until the mixture is slightly fluffy and pale in color. Set this mixture aside.
    3. In a small dish, place the cold water and sprinkle the gelatin over it. Set aside for the gelatin to bloom.
    4. Once the spices have infused the milk, gently reheat the milk over medium-low heat to just below boiling. Temper the eggs by gradually whisking in a small amount of the warm milk. Continue whisking and slowly incorporate the rest of the milk. Return the mixture to the saucepan and heat it again, making sure it does not reach boiling point, while whisking continuously.
    5. Remove the pan from heat and whisk in the bloomed gelatin and a hint of sea salt. Allow the mixture to cool slightly before adding the melted dark chocolate and the fragrant vanilla.
    6. Strain the mixture through a fine mesh sieve to remove the infused spices. Let it cool to room temperature. Once cooled, whip the whipping cream to soft peaks and delicately fold it into the chocolate custard. Cover the Bavarian Cream with a piece of plastic wrap directly touching the surface to prevent a skin from forming. Chill the cream until it is ready to be used.
