Ingredients

125 grams coconut oil
1 tablespoon malt extract
100 grams honey
50 grams coarsely chopped almonds
100 grams crystallized ginger, roughly chopped
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1 12 teaspoons ground allspice
1 12 teaspoons ground cardamom
1 teaspoon ground coriander
300 grams whole wheat flour such as Community Grains Hard Red Winter Wheat
zest of 1 mandarin orange

Instructions

    1. In a small saucepan, combine coconut oil, malt extract, and honey. Heat over low heat and stir until well combined. Remove from heat and let cool.
    2. In a large bowl, combine coarsely chopped almonds, crystallized ginger, kosher salt, ground cinnamon, ground allspice, ground cardamom, ground coriander, whole wheat flour and mandarin orange zest. Mix well.
    3. Add the cooled coconut oil, malt extract, and honey mixture to the flour mixture. Stir using a rubber spatula until you achieve a thick and slightly sandy mixture.
    4. Place the mixture on a large piece of parchment paper and shape it into a 4×8 inch slab. Flatten the top with a rolling pin, then fold the slab neatly like a present using the parchment paper. Secure it with plastic wrap and freeze it overnight.
    5. When ready to bake, remove the slab from the freezer and let it thaw for about 10 minutes. Preheat the oven to 350ºF. Line two baking sheets with parchment paper. Use a sharp knife to shave off slices from the slab, aiming for each slice to be about 1/16th of an inch thick. Place the slices on the baking sheet, leaving some space between each. Bake for 12-16 minutes or until they darken in color and dry out slightly. Baking time may vary, so keep a close eye on them. Once baked, transfer to a cooling rack and store in an airtight container.
