Ingredients
2 | lbs pork shoulder or pork belly, thinly sliced |
---|---|
3 | scallions, cut into 2-inch pieces |
1 | small onion, thinly sliced |
6 | tablespoons gochujang Korean chili paste |
3 | tablespoons rice wine or mirin |
2 | tablespoons brown sugar |
1 | tablespoon corn syrup or honey |
2 | tablespoons sesame oil |
3 | tablespoons minced garlic |
1 | tablespoon grated fresh ginger |
4 | tablespoons grated Asian pears or apples |
lettuce leaf for serving |
Instructions
1. | Combine the pork slices, scallions, and thinly sliced onion in a medium bowl. |
---|---|
2. | Whisk together the gochujang Korean chili paste, rice wine or mirin, brown sugar, corn syrup or honey, sesame oil, minced garlic, grated fresh ginger, and grated Asian pears in a small bowl to create the marinade. Pour the marinade over the meat mixture. |
3. | Using your hands, mix everything together thoroughly. Cover and let it marinate for at least an hour. For longer marination, refrigerate the mixture. |
4. | Grill the marinated pork slices or pan grill them. If using a skillet, heat a combination of neutral oil and sesame oil. Cook the meat in batches without overcrowding the pan to ensure caramelization, approximately 5 to 6 minutes per batch. |
5. | Serve the cooked pork with lettuce leaves. Wrap the pork mixture in the lettuce leaves for a delightful culinary experience. Boston lettuce or romaine lettuce works best for rolling. |
