Start your day right with this nourishing spinach omelette. Packed with vibrant, roughly chopped baby spinach leaves and teamed up with subtly melted mozzarella, this omelette assures a delightful freshness in every bite. Topped with a dash of cayenne or paprika, the omelette adds a spicy twist leaving your taste buds tingling, all tied together with a soft and creamy texture.
| 2 | eggs |

| 1 | baby spinach leaves, roughly chopped | 
| 2 | pinches freshly ground black pepper | 
| 1 | pinch cayenne or paprika | 
| 1- 2 | butter or ghee, can substitute with olive oil | 
| 2 | tablespoons milk | 
| 30 | grams mozzarella cheese | 
| 1. | Warm a non-stick pan over medium heat. Introduce your butter, ghee or olive oil. When it starts to sizzle, add your spinach, sauteing until it softens and wilts, approximately one minute. |

| 2. | Whisk together two eggs, and blend in 2 tablespoons of milk with a dash each of salt and fresh ground black pepper (cayenne or paprika). |
