Start your day right with this nourishing spinach omelette. Packed with vibrant, roughly chopped baby spinach leaves and teamed up with subtly melted mozzarella, this omelette assures a delightful freshness in every bite. Topped with a dash of cayenne or paprika, the omelette adds a spicy twist leaving your taste buds tingling, all tied together with a soft and creamy texture.

Ingredients

1 leek, finely chopped

1 handful baby spinach leaves, roughly chopped

clove 1 clove of garlic, minced

pinches 2 pinches freshly ground black pepper

pinch 1 pinch cayenne or paprika

tablespoons 1-2 tablespoons neutral oil, butter or ghee

Instructions

1. Warm a non-stick pan over medium heat. Introduce your butter, ghee or olive oil. When it starts to sizzle, add your spinach, sauteing until it softens and wilts, approximately one minute.
2. Whisk together two eggs, and blend in 2 tablespoons of milk with a dash each of salt and fresh ground black pepper (cayenne or paprika).
3. Gently layer the egg mixture over the spinach. Allow the omelette to cook thoroughly and just before it's done, grace it with a sprinkle of mozzarella cheese.
4. Serve your freshly-cooked spinach omelette alongside some buttered toast and savor the combination of flavors.
