Ingredients

8 ounces Stilton cheese or blue cheese
3 tablespoons cream or creme fraiche
1 teaspoon Worcestershire sauce
1 teaspoon English mustard or Dijon mustard
2 ounces walnut pieces
8 slices bread slices
2 ounces butter
1 teaspoon cayenne pepper
black pepper
salt (optional)

Instructions

    1. Preheat the grill to the highest setting and line a grill pan with kitchen foil.
    2. In a mixing bowl, mash the Stilton cheese with a fork. Add cream or creme fraiche, Worcestershire sauce, mustard, black pepper, salt (optional), and walnut pieces. Mix well and set aside.
    3. Place the bread slices on the lined grill pan and toast until golden brown. Remove from the grill and spread the untoasted side with butter.
    4. Spread the cheese mixture over the toasted side of the bread, ensuring it reaches the edges.
    5. Sprinkle the Cayenne pepper over the cheese mixture.
    6. Grill for 2-4 minutes until the cheese is melted, bubbling, and lightly browned.
    7. Serve 2 slices per person with a crisp seasonal salad and a glass of Red wine. This dish makes for the ultimate supper!
    8. For aperitif nibbles, cut rounds from the bread slices and assemble as above. This recipe serves about 8 people if prepared in this manner.
