Strawberry Donut Mini Muffin Delights

Ingredients

1 | large egg, lightly beaten |
1 1/2 | teaspoons vanilla extract |
1 | cup finely chopped fresh strawberries |
1/4 | cup butter |
1/2 | cup white sugar, or as needed |
Instructions
1. | Preheat the oven to 350 degrees F (175 degrees C) and generously grease 2 mini muffin pans. |

2. | In a large bowl, combine all-purpose flour, sugar, baking powder, baking soda, salt, and a hint of nutmeg. Add in room temperature buttermilk, cooled melted butter, lightly beaten egg, and fragrant vanilla extract. Gently fold in the finely chopped fresh strawberries. Evenly distribute the batter into the mini muffin pans, filling each cup to 3/4 full. |
3. | Place the prepared muffin pans in the preheated oven and bake for 12 to 14 minutes or until the muffins' tops spring back lightly when touched. Let the muffins cool in the pans for 5 minutes before transferring them to a wire rack. |
4. | While the muffins are baking, melt 1/4 cup of butter in a shallow microwave-safe bowl for about 30 seconds. In a separate shallow bowl, place 1/2 cup of white sugar. |
5. | Once the mini muffins have cooled slightly, dip the tops into the melted butter, then generously coat them with sugar. Serve these delectable delights warm, or let them cool completely before savoring. |
