Stuffed Avocados with Shrimp

A delightful dish of ripe avocados stuffed with a flavorful mixture of bay shrimp, celery, cherry tomatoes, and a creamy dressing.

Ingredients

3 ripe avocados (save the avocado shell)
1 pound about 1 pound of bay shrimp
2 stalks pieces of celery, finely sliced
1 cup cup of cherry tomatoes, cut in half
2 tablespoons tablespoons of chopped parsley
2 tablespoons tablespoons of creme fraiche or sour cream
2 tablespoons tablespoons of mayonnaise
2 tablespoons tablespoons of chopped chives
14 cup or less cups of lemon juice
salt and pepper to taste
coarse sea salt

Instructions

1. To prepare the dressing, whisk together the creme fraiche, mayonnaise, lemon juice, and chives. Season with a pinch of salt and pepper.
2. Begin by cutting the avocados in half. Carefully slice the avocado lengthwise and crosswise, then scoop out the pieces with a spoon. Place the avocado in a bowl with celery, cherry tomatoes, and bay shrimp. Mix in the prepared dressing and adjust the seasoning with more salt, pepper, or lemon juice if needed. Cover the mixture and refrigerate. Just before serving, fill the avocado shells with the shrimp mixture, and garnish with chopped parsley and a sprinkle of coarse sea salt. Serve and enjoy.
