- Begin by washing the cherry tomatoes and delicately slicing off the tops.
- Using a paring knife, carefully core the cherry tomatoes and remove the seeds and pulp using a small spoon.
- Place the hollowed tomatoes upside down on a baking tray to allow the juices to drain.
- Dice the tomato pulp and combine it with the juices and seeds in a bowl.
- Drain the tuna and fold it into the tomato mixture, using between 1 and 2 cans of tuna per pint of cherry tomatoes.
- Adjust the creaminess by adding mayonnaise to your desired level.
- Briefly rinse a handful of capers and finely dice them before adding them to the mixture. Adjust the amount based on your preference.
- Finely chop flat leaf parsley and mix it into the filling.
- Season with salt and pepper according to taste.
- Carefully stuff each cherry tomato with the tuna mixture, ensuring not to damage the tomato walls.
- For an optional touch, garnish each stuffed tomato with a small dollop of mayonnaise.
