A delightful appetizer featuring cherry tomatoes filled with a savory tuna and caper mixture, perfect for any gathering.

Ingredients

cherry tomatoes
tuna in olive oil
mayonnaise
capers
flat leaf Italian parsley
salt and pepper

Instructions

1. Begin by washing the cherry tomatoes and delicately slicing off the tops.
2. Using a paring knife, carefully core the cherry tomatoes and remove the seeds and pulp using a small spoon.
3. Place the hollowed tomatoes upside down on a baking tray to allow the juices to drain.
4. Dice the tomato pulp and combine it with the juices and seeds in a bowl.
5. Drain the tuna and fold it into the tomato mixture, using between 1 and 2 cans of tuna per pint of cherry tomatoes.
6. Adjust the creaminess by adding mayonnaise to your desired level.
7. Briefly rinse a handful of capers and finely dice them before adding them to the mixture. Adjust the amount based on your preference.
8. Finely chop flat leaf parsley and mix it into the filling.
9. Season with salt and pepper according to taste.
10. Carefully stuff each cherry tomato with the tuna mixture, ensuring not to damage the tomato walls.
11. For an optional touch, garnish each stuffed tomato with a small dollop of mayonnaise.
