For Honey-Mustard Pork Chops

¼ cup Dijon mustard
4 teaspoons honey
1 teaspoon apple cider or white-wine vinegar
¼ teaspoon black pepper
20 ounces bone-in loin pork chops, 1 inch thick (4 pieces)

Instructions

  • For Marinating the Pork Chops

    1. In a small bowl or cup, whisk together the Dijon mustard, honey, apple cider vinegar, and black pepper.
    2. Transfer the marinade to a large zip lock plastic bag and add the bone-in loin pork chops. Seal the bag, removing any air, and coat the pork chops completely by gently turning the bag several times.
    3. Allow the pork chops to marinate in the refrigerator for at least 4 hours, or preferably overnight, remembering to turn the bag occasionally.
  • For Cooking the Pork Chops

    1. Preheat the broiler and spray the broiler rack with nonstick spray.
    2. Remove the marinated pork chops from the bag and discard the marinade. Place the chops on the broiler rack and broil them 5 inches from the heat source until they are beautifully browned and cooked through, about 6 minutes per side.
