12 chopped onion
1 large granny smith apple, peeled, cored, and diced
2 tablespoons balsamic vinegar
12 cup dried cranberries
salt and pepper to taste
2 6-ounce pork chops

    1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and diced apple. Cook and stir for 5 minutes until softened. Mix in the dried cranberries and balsamic vinegar, cooking until the mixture is fragrant and well combined. Season with salt and pepper to taste. Remove from heat and set aside to cool.
    2. Preheat the oven to 350°F (175°C) and lightly grease a small baking dish.
    3. Carefully cut a pocket into each pork chop using a sharp, thin-bladed knife. Stuff the cooled apple mixture into the pork chops and secure with toothpicks if necessary. Heat olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper, then sear in the skillet until browned on both sides. Transfer the pork chops to the prepared baking dish. Top with the remaining apple mixture and cover the dish with aluminum foil.
