An elegant dessert perfect for summer gatherings, this tiramisu is infused with white wine and peach tea, and layered with a mix of fresh berries.
Ingredients
1⁄4 | cup white sugar, divided, or more to taste |
---|---|
1⁄4 | cup Pinot Grigio wine, divided |
3 | strawberries, sliced, or more to taste |
3 | blueberries |
3 | raspberries |
1 | teaspoon freshly squeezed orange juice |
1⁄2 | cup mascarpone cheese |
1⁄4 | cup heavy whipping cream |
2 | tablespoons white sugar |
1 | tablespoon vanilla extract |
1⁄2 | cup strong peach-flavored iced tea |
10 | ladyfinger cookies, broken in half, or more as needed |
1 | tablespoon grated white chocolate, or as needed (Optional) |
1 | tablespoon confectioners' sugar, or as needed (Optional) |
Instructions
1. | In a small bowl, combine white sugar, Pinot Grigio wine, strawberries, blueberries, raspberries, and freshly squeezed orange juice. Toss gently to coat the berries. |
---|---|
2. | In a separate bowl, carefully mix mascarpone cheese and heavy whipping cream using a spoon or whisk. Add white sugar and vanilla extract. Using an electric mixer, beat the mixture until creamy and smooth. |
3. | Mix the remaining wine and strong peach-flavored iced tea in a separate bowl. Dip each ladyfinger cookie in the liquid once, ensuring it is coated but not overly soggy. |
4. | Spoon a generous portion of the mascarpone cream onto the bottom of a serving cup. Arrange a layer of soaked ladyfingers to cover the bottom, followed by a layer of mixed berries. Add another layer of mascarpone cream. Repeat the layers for each serving cup. |
5. | Gently tap the bottom of each cup on the counter to remove any excess air bubbles. Cover the cups with plastic wrap and refrigerate the tiramisu until it is chilled and set, ideally for 8 hours to overnight. Before serving, dust the tops with grated white chocolate and confectioners' sugar. |
