Sweet Bean Patties with Coconut Milk

- Begin by soaking the green lentils for 4 hours or overnight. Wash and drain them well.
- In a large pot, combine the green lentils, water, and pandan leaves (you can use vanilla powder as a substitute). Bring to a boil until the lentils soften and the water has been absorbed and reduced.
- Add sugar, salt, and coconut milk. Stir occasionally. Cook until the mixture thickens and dries up.
- Remove the pot from the heat and set it aside. Allow the sweet beans mixture to cool down to room temperature.
- Take 2 – 3 tablespoons of the mixture and shape it into small patties, about 1/2 centimeter thick. This amount of mixture will make around 15-16 patties. Ensure you press the patties firmly against your palm while shaping to avoid any air gaps, which could cause them to fall apart during frying.
- Prepare the breaded mixture by combining the specified ingredients. Add water gradually and stir until the dough is smooth with a medium thickness. You can strain the mixture to remove any lumps.
- Dip the patties into the breaded mixture, a couple at a time. Deep-fry them in hot oil until they turn golden brown.
- Drain the fried patties on a paper towel and serve them warm alongside a cup of jasmine tea.
