250 grams Green Lentils
2 tablespoons Rice Flour
100 grams Sugar
70 milliliters Coconut Milk
2 pieces Pandan (screwpine) leaves
Salt
Oil for deep frying
1200 milliliters Water
7 tablespoons All-purpose Flour
3 tablespoons Rice Flour
1 tablespoon Sugar
milliliters Cold Water

Instructions

    1. Begin by soaking the green lentils for 4 hours or overnight. Wash and drain them well.
    2. In a large pot, combine the green lentils, water, and pandan leaves (you can use vanilla powder as a substitute). Bring to a boil until the lentils soften and the water has been absorbed and reduced.
    3. Add sugar, salt, and coconut milk. Stir occasionally. Cook until the mixture thickens and dries up.
    4. Remove the pot from the heat and set it aside. Allow the sweet beans mixture to cool down to room temperature.
    5. Take 2 – 3 tablespoons of the mixture and shape it into small patties, about 1/2 centimeter thick. This amount of mixture will make around 15-16 patties. Ensure you press the patties firmly against your palm while shaping to avoid any air gaps, which could cause them to fall apart during frying.
    6. Prepare the breaded mixture by combining the specified ingredients. Add water gradually and stir until the dough is smooth with a medium thickness. You can strain the mixture to remove any lumps.
    7. Dip the patties into the breaded mixture, a couple at a time. Deep-fry them in hot oil until they turn golden brown.
    8. Drain the fried patties on a paper towel and serve them warm alongside a cup of jasmine tea.
