A delicious and savory meatloaf loaded with Swiss cheese, mushrooms, and bacon.

Ingredients

1 lb ground beef
12 lb ground pork
1 small onion, finely chopped
1 egg
12 cup corn flake crumbs
14 cup evaporated milk
8 grated Swiss cheese
1 (4 ounce) can mushrooms, drained
1 (12 ounce) package bacon

Instructions

    1. Begin by combining all ingredients except for the cheese and bacon in a large mixing bowl.
    2. Next, cook the bacon until crispy, then crumble it. Drain the bacon well and set aside half of it. Add the other half of the crumbled bacon to the meat mixture.
    3. Mix in all the grated Swiss cheese, reserving half a cup for later use.
    4. Thoroughly blend all the ingredients together and transfer the mixture into a casserole dish.
    5. Sprinkle the remaining cooked crumbled bacon on top of the meatloaf.
    6. Bake the meatloaf at 350 degrees Fahrenheit for approximately an hour, or until it is fully cooked through.
    7. Once cooked, top the meatloaf with the reserved shredded Swiss cheese.
    8. Return the meatloaf to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
