Swiss Cheese and Mushroom Meatloaf with Bacon

A delicious and savory meatloaf loaded with Swiss cheese, mushrooms, and bacon.

1 | lb ground beef |

1⁄2 | lb ground pork |
1 | small onion, finely chopped |
1 | egg |
1⁄2 | cup corn flake crumbs |
1⁄4 | cup evaporated milk |
8 | grated Swiss cheese |
1 | (4 ounce) can mushrooms, drained |
1 | (12 ounce) package bacon |
Instructions

- Begin by combining all ingredients except for the cheese and bacon in a large mixing bowl.
- Next, cook the bacon until crispy, then crumble it. Drain the bacon well and set aside half of it. Add the other half of the crumbled bacon to the meat mixture.
- Mix in all the grated Swiss cheese, reserving half a cup for later use.
- Thoroughly blend all the ingredients together and transfer the mixture into a casserole dish.
- Sprinkle the remaining cooked crumbled bacon on top of the meatloaf.
- Bake the meatloaf at 350 degrees Fahrenheit for approximately an hour, or until it is fully cooked through.
- Once cooked, top the meatloaf with the reserved shredded Swiss cheese.
- Return the meatloaf to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
