Tangy Mango Chicken with Spicy Mustard Greens

1 | large mango, peeled, seeded, and sliced - divided |
1 | tablespoon Dijon mustard |
1 | clove garlic, crushed |
1 | teaspoon crushed red pepper flakes |
2 | small onions, sliced - divided |
1⁄4 | cup white sugar |
1⁄4 | cup brown sugar |
1 | bunch mustard greens, washed and chopped |
1⁄4 | cup raisins |
Instructions
1. | Begin by combining ground cumin, curry powder, white and balsamic vinegar, olive oil, brown sugar, a pinch of salt, and black pepper in a resealable plastic bag. Seal the bag and massage the ingredients together to create a harmonious marinade. Add the chicken drumsticks to the bag and massage again to ensure they are fully coated. |

2. | In a large skillet, melt butter over medium heat. Add the marinated chicken pieces and cook until beautifully browned on both sides, which should take around 10 to 12 minutes. |
3. | In a blender, combine half of the mango slices, Dijon mustard, crushed garlic, red pepper flakes, and one of the sliced onions. Blend until smooth for about a minute. Pour this vibrant mango mixture into the skillet with the chicken. Introduce the remaining sliced onion, white sugar, brown sugar, mustard greens, and raisins. Stir well to dissolve the sugars. Bring the mixture to a boil, then reduce the heat to a simmer. Continue cooking until the chicken is fully cooked, stirring occasionally, for an additional 10 to 15 minutes. |
