This is a classic skillet grilled cheese built on buttered bread and a generous layer of melted cheddar. A small amount of chopped dates and fennel adds a sweet, aromatic Turkish-style accent without moving the sandwich away from the familiar grilled cheese structure.

Instructions

1. Lay the bread slices on a work surface and spread one side of each slice with softened butter.
2. Turn 4 slices buttered-side down and divide half of the cheddar over them.
3. Sprinkle the chopped dates and ground fennel evenly over the cheese.
4. Top with the remaining cheddar, then close the sandwiches with the remaining bread, buttered-side up.
5. Heat a large skillet or griddle over medium-low heat.
6. Cook the sandwiches until the bottoms are deeply golden and crisp, 3 to 4 minutes.
7. Flip the sandwiches and cook until the second sides are golden and the cheese is fully melted, 3 to 4 minutes more.
8. Rest the sandwiches for 1 minute, then cut and serve while the cheese is still hot.
