Recipe

This is a classic skillet grilled cheese built on buttered bread and a generous layer of melted cheddar. A small amount of chopped dates and fennel adds a sweet, aromatic Turkish-style accent without moving the sandwich away from the familiar grilled cheese structure.
8 | slices sandwich bread |
|---|---|
8 | ounces sharp cheddar cheese, thinly sliced or shredded |
1⁄4 | cup date, finely chopped |
1⁄4 | teaspoon fennel seed, finely ground |
4 | tablespoons unsalted butter, softened |
| 1. | Lay the bread slices on a work surface and spread one side of each slice with softened butter. |
|---|---|
| 2. | Turn 4 slices buttered-side down and divide half of the cheddar over them. |
| 3. | Sprinkle the chopped dates and ground fennel evenly over the cheese. |
| 4. | Top with the remaining cheddar, then close the sandwiches with the remaining bread, buttered-side up. |
| 5. | Heat a large skillet or griddle over medium-low heat. |
| 6. | Cook the sandwiches until the bottoms are deeply golden and crisp, 3 to 4 minutes. |
| 7. | Flip the sandwiches and cook until the second sides are golden and the cheese is fully melted, 3 to 4 minutes more. |
| 8. | Rest the sandwiches for 1 minute, then cut and serve while the cheese is still hot. |
