Ingredients

250 g low-fat Quark (or use cream cheese mixed with yogurt to a ricotta-like consistency)
25 g butter, softened
75 g whole wheat flour
75 g flour (you can use all whole wheat, too)
1 salt
1 small carrot, chopped finely
1 small parsnip (or other vegetables of your choice to make up this amount, think of peas, potatoes, broccoli, etc.)
1 teaspoon oil
1 freshly ground black pepper
1 chili powder
1 curry powder
1 teaspoon dried rosemary
50 g cheese, grated (use a mature variety, low fat is fine)

Instructions

    1. In a large bowl, combine low-fat Quark, softened butter, whole wheat flour, all-purpose flour, and salt. Using your hands, knead the ingredients quickly until a smooth dough forms. Refrigerate the dough while preparing the filling.
    2. Heat oil in a frying pan over medium heat. Sauté the finely chopped carrot, parsnip, or other vegetables of your choice for about 5 minutes. Season with freshly ground black pepper, chili powder, curry powder, and dried rosemary. Let the mixture cool slightly for 2 minutes, then stir in the grated cheese.
    3. On a lightly floured surface, roll out the dough thinly. Using a glass or 8 cm cookie cutter, cut out 8 rounds.
    4. Place 1 tablespoon of the vegetable and cheese filling onto each dough round. Fold the dough over to form a pasty shape, then seal by pressing down the edges with a fork.
    5. Arrange the pastries on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C/350°F for approximately 30 minutes (check at 25 minutes to prevent overbrowning).
    6. Serve the pastries with a side of dipping sauce and a refreshing salad of your choice.
