250 | g low-fat Quark (or use cream cheese mixed with yogurt to a ricotta-like consistency) |

75 | g whole wheat flour |
75 | g flour (you can use all whole wheat, too) |

1 | small carrot, chopped finely |
1 | small parsnip (or other vegetables of your choice to make up this amount, think of peas, potatoes, broccoli, etc.) |
1 | teaspoon oil |
1 | freshly ground black pepper |
1 | chili powder |
1 | curry powder |
1 | teaspoon dried rosemary |
50 | g cheese, grated (use a mature variety, low fat is fine) |
Instructions

- In a large bowl, combine low-fat Quark, softened butter, whole wheat flour, all-purpose flour, and salt. Using your hands, knead the ingredients quickly until a smooth dough forms. Refrigerate the dough while preparing the filling.
- Heat oil in a frying pan over medium heat. Sauté the finely chopped carrot, parsnip, or other vegetables of your choice for about 5 minutes. Season with freshly ground black pepper, chili powder, curry powder, and dried rosemary. Let the mixture cool slightly for 2 minutes, then stir in the grated cheese.
- On a lightly floured surface, roll out the dough thinly. Using a glass or 8 cm cookie cutter, cut out 8 rounds.
- Place 1 tablespoon of the vegetable and cheese filling onto each dough round. Fold the dough over to form a pasty shape, then seal by pressing down the edges with a fork.
- Arrange the pastries on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C/350°F for approximately 30 minutes (check at 25 minutes to prevent overbrowning).
- Serve the pastries with a side of dipping sauce and a refreshing salad of your choice.
