Vanilla Pear Sorbet

A delightful and refreshing sorbet made with ripe pears, vanilla bean, and a hint of lemon juice.

Ingredients

4 Ripe but firm medium-sized pears, cored and diced
1 cup water
½ cup sugar
1 Vanilla bean, split and seeds scraped
1 teaspoon lemon juice

Instructions

1. Begin by coring the pears and cutting them into 1-inch dice, leaving the peel intact. Place the diced pears in a pot with half a cup of water. Cook over medium heat until the pears are soft and easily mashable, which should take about 10-15 minutes.
2. While the pears are cooking, split the vanilla bean in half lengthwise and scrape out the flavorful seeds into a saucepan. Add the remaining half cup of water, sugar, and the empty vanilla bean pod into the saucepan. Bring the mixture to a gentle boil, stirring until the sugar has completely dissolved. Once ready, remove from heat.
3. Take out the vanilla bean pod from the saucepan and transfer it to a large bowl. Blend together the sugar/water mixture, lemon juice, and the cooked pear mixture in a blender until smooth. Pour this mixture into the large bowl with the vanilla bean pod. Allow the mixture to cool down to room temperature, cover it with plastic wrap, and let it chill thoroughly in the refrigerator for 3-4 hours.
4. Once the mixture is fully chilled, remove the vanilla bean from the bowl. Process the sorbet in your ice cream maker following the manufacturer's instructions. This sorbet retains its smooth texture and flavor for up to two weeks in the freezer. Serve and enjoy this delightful treat!
