A delicious and easy-to-make vegan 'meatloaf' recipe featuring a blend of two types of beans, hearty vegetables, oats, and tofu. This savory dish is sure to be a hit with everyone at your dining table.

Ingredients

1 cooking spray
1 (15.5 ounce) can garbanzo beans, drained
1 (15.5 ounce) can dark red kidney beans, drained
1 (16 ounce) package firm tofu, drained
1 (15 ounce) can tomato sauce
1 cup 1 cup rolled oats
1 medium green bell pepper, diced
1 tablespoon 1 tablespoon dry vegan egg replacer
1 teaspoon 1 teaspoon onion powder
1 teaspoon 1 teaspoon garlic powder
1 pinch oregano, to taste
salt, to taste

Instructions

    1. Preheat the oven to 375 degrees F (190 degrees C). Prepare a baking dish by greasing it with cooking spray.
    2. In a food processor, combine garbanzo beans and dark red kidney beans; pulse until a smooth consistency is achieved. Crumble the firm tofu into the food processor and pulse until well combined, resembling ground meat.
    3. Transfer the bean and tofu mixture into a large bowl. Add tomato sauce, rolled oats, diced green bell pepper, chopped onion, dry vegan egg replacer, onion powder, garlic powder, oregano, and salt. Mix the ingredients by hand until thoroughly combined.
    4. Shape the mixture into a loaf shape and place it in the prepared baking dish.
    5. Bake the loaf in the preheated oven for approximately 1 hour and 30 minutes, or until fully cooked through.
