Eastern Carolina sauce is barbecue at its most elemental: cider vinegar and red pepper flakes doing most of the talking, sugar and Worcestershire rounding the edges, and — this version's small heresy — a spoonful of ketchup nodding west toward Lexington. It's thin by design, made to soak into pulled pork rather than sit on top of it. Three cups' worth, and it only gets better after a few days in the fridge.

Instructions

1. In a medium saucepan over low heat, combine the cider vinegar, water, red chili pepper flakes, sugar, Worcestershire sauce, kosher salt, freshly ground black pepper, and ketchup. Whisk the ingredients together and simmer the sauce for 30 minutes.
