Apple and Curry Infused Chicken Stew

A flavorful and aromatic chicken stew with the sweetness of Granny Smith apples and a touch of curry.

Ingredients

4 tablespoons vegetable oil
2 12 lbs boneless chicken breasts, cut into 1 1/2-inch pieces and patted dry
1 whole large onion, minced
5 cloves garlic cloves, minced
1 tablespoon curry powder
1 teaspoon ground coriander
1 teaspoon ground cumin
12 teaspoon ground ginger
14 teaspoon cayenne pepper
3 tablespoons flour
1 lb canned whole tomatoes, chopped including the liquid
1 12 cups chicken broth
12 cup golden raisins
1 whole small lemon, Juiced and it's grated zest
1 whole granny smith apple, peeled, cored, and cubed
6 cups cooked long-grain rice, to serve curry with

Instructions

    1. Begin by heating 4 tablespoons of vegetable oil in a heavy pot over medium-high heat. Brown the boneless chicken breast pieces in small batches, seasoning with salt and pepper, until they are golden on all sides. Transfer the browned meat to a plate.
    2. In the same pot, add the minced onion and cook for 5 minutes until softened. Add the minced garlic, curry powder, coriander, cumin, ginger, and cayenne pepper, cooking for an additional minute. Stir in the flour and cook for 2 more minutes.
    3. Return the browned chicken to the pot, along with the chopped tomatoes and their liquid, chicken broth, golden raisins, lemon juice and zest, and season with salt and pepper. Bring to a boil, then reduce the heat, cover, and simmer for 1 1/2 hours.
    4. After that, add the cubed Granny Smith apple and continue to simmer, covered, for an additional 30 minutes until the meat is tender. Serve the flavorful chicken stew with cooked long-grain rice.
    5. To freeze leftovers, allow the stew to cool before transferring it to a freezer-safe container or bag. It can be frozen for up to 2 months.
    6. To reheat, thaw the stew in the refrigerator. Warm it in a pot over medium heat, covered, stirring occasionally, for about 15 minutes. Adjust the seasoning with salt, pepper, and fresh lemon juice to taste before serving with rice.
