Ingredients

4 tablespoons ginger (freshly made paste)
3 tablespoons coriander powder (toasted and ground)
2 teaspoons cumin powder (toasted and ground)
salt & fresh ground pepper (to taste)
1 teaspoon turmeric
8 whole cloves
8 whole cardamom pods
1 cinnamon stick
4 tablespoons vegetable oil
1 teaspoon cayenne pepper (or hot chili pepper, to taste)
1 12 boneless chicken
1 large onion, diced
1 tomatoes, diced
2 tablespoons butter (optional)
hot water

Instructions

  • Preparation

    1. In a blender, create a paste by combining equal parts of peeled ginger and garlic with a touch of water.
    2. Cut the chicken into bite-sized pieces and season with salt, pepper, turmeric, cayenne (if desired), cumin powder, and coriander powder. Set aside.
  • Cooking Process

    1. Heat oil in a wide pan over medium heat. Add cloves, cardamom, and cinnamon stick.
    2. Saute the spices for a few minutes, then remove the cloves and cardamom.
    3. Add diced onions and cook until soft and golden to create a creamy base for the gravy.
    4. Introduce the ginger/garlic paste and cook on medium-low heat, scraping the bottom of the pan.
    5. Add the seasoned chicken and cook until it changes color. Incorporate butter if desired.
    6. Pour in diced tomatoes and cook for additional 2 minutes.
    7. Cover the chicken with hot water, bring to a boil, then simmer over medium-low heat for 25-30 minutes, stirring occasionally.
