Preparation
- In a blender, create a paste by combining equal parts of peeled ginger and garlic with a touch of water.
- Cut the chicken into bite-sized pieces and season with salt, pepper, turmeric, cayenne (if desired), cumin powder, and coriander powder. Set aside.

Cooking Process
- Heat oil in a wide pan over medium heat. Add cloves, cardamom, and cinnamon stick.
- Saute the spices for a few minutes, then remove the cloves and cardamom.
- Add diced onions and cook until soft and golden to create a creamy base for the gravy.
- Introduce the ginger/garlic paste and cook on medium-low heat, scraping the bottom of the pan.
- Add the seasoned chicken and cook until it changes color. Incorporate butter if desired.
- Pour in diced tomatoes and cook for additional 2 minutes.
- Cover the chicken with hot water, bring to a boil, then simmer over medium-low heat for 25-30 minutes, stirring occasionally.
